This jam is second in line of the jam series with yet more innovative pairings of local herbs and spices.
The basis of this inspiration was from a local hot tea beverage from the village of Agiassos called Kaynari. Unique of its kind and a recipe thatincludeseight different spicesbut remains mostly a secret and is passed along by word of mouth over the years.
TheKaynari mixturecontainscinnamon, cloves, mountain tea, cardamom, and others, and is energy boosting and high in vitamins which helps fight the common cold.
Thus, this jam uses organic green olives with the Kaynari mixture, Greek mountain tea, cinnamon, orange, lemon juice, and brown sugar.
